Holiday Valley in Ellicottville, NY is probably the best in NY. There’s also some nice resorts in Vermont such as Killington and Stowe.

    Where in NY?
I think Poconos in PA, or Hunter in NJ

You can easily drive to any resort in Southern Vermont, The Adirondacks, Catskills, or Poconos in under 5 hours from the greater New York metro area.

Since you will most likely want to ski some place for several days, I suggest a larger resort in Southern Vermont such as Killington, Okemo, Stratton, or Mt. Snow. Given your ability level, I believe Okemo would probably be the best choice as it has a very good snowboarding/skiing school and there is enough terrain in the beginner/intermediate ability level that you should be able to keep yourself occupied for several days.

A multi-day trip to the Poconos would not be worth it unless you buy a combo ticket for Jack Frost and Big Boulder. Neither are big, but you can ski both for one price. Likewise, the ski school at both places is very good.

I would avoid the following areas like the plague during the holiday week.
    Hunter Mountain, NY
    Mountain Creek, NJ
    Shawnee, PA
    Camelback, PA
    Blue Mountain, PA
    Mt. Snow, VT

Personally, I’d learn to ski or snowboard at another time during the year, go a couple of times later this season, and then plan out a big trip for next Christmas. The best places to ski and ride during holiday periods are smaller resorts that are not always as well known. The more popular places are always best avoided during peak times.
